Tex-Mex Cabbage Casserole

This recipe is full of goodness ~ low-carb, high protein, nutrient rich and most of all delicious! Enjoy!

Ingredients:

  • 1 pound ground chicken
  • ½ cup chopped veggies onion, pepper, celery
  • 1 package of coleslaw cabbage mix
  • 1 10 ounce can tomatoes with green chilies (undrained)
  • 1 jar Siete red Enchilada Sauce
  • 1 teaspoon garlic powder
  • ½ block of cream cheese
  • salt and pepper to taste
  • 1 cup shredded cheese cheddar or colby jack is our favorite
  1. Brown your chicken over medium heat in a large skillet and drain off any grease.
  2. Add the diced veggies and sauté for 3-5 minutes.
  3. Add the chopped cabbage, green chilis, enchilada sauce and spices and stir well.
  4. Cover and reduce heat to medium, cooking for 15-18 minutes, stirring occasionally.
  5. When the cabbage has reached your desired tenderness, add cream cheese and stir until melted.
  6. Top with cheese and remove from heat. Place the lid on the skillet and allow the cheese to melt for about 2 minutes.
