
This recipe is full of goodness ~ low-carb, high protein, nutrient rich and most of all delicious! Enjoy!
Ingredients:
- 1 pound ground chicken
- ½ cup chopped veggies onion, pepper, celery
- 1 package of coleslaw cabbage mix
- 1 10 ounce can tomatoes with green chilies (undrained)
- 1 jar Siete red Enchilada Sauce
- 1 teaspoon garlic powder
- ½ block of cream cheese
- salt and pepper to taste
- 1 cup shredded cheese cheddar or colby jack is our favorite
- Brown your chicken over medium heat in a large skillet and drain off any grease.
- Add the diced veggies and sauté for 3-5 minutes.
- Add the chopped cabbage, green chilis, enchilada sauce and spices and stir well.
- Cover and reduce heat to medium, cooking for 15-18 minutes, stirring occasionally.
- When the cabbage has reached your desired tenderness, add cream cheese and stir until melted.
- Top with cheese and remove from heat. Place the lid on the skillet and allow the cheese to melt for about 2 minutes.
