Because my Mason Jar Salad posts are some of my most popular, I thought I would post a quick one on my latest creation with quinoa. When you cook the quinoa for this salad, I would recommend using chicken or vegetable broth instead of just water. It gives it a little extra flavor.
Here is what I layered in my quinoa salad:
- Lite Balsamic Vinaigrette Dressing (I like Newman’s Own.)
- Cucumber, chopped
- Red & Yellow Bell Peppers, chopped
- Black Beans
- Feta Cheese
- Quinoa
- Cherry Tomatoes
- Kalamata Olives
