Thought I would post this recipe on my blog because of all the likes on Instagram and because my other quinoa salads seem to be super popular on Pinterest. This salad is so fresh and is great as a main meal but can also be used as a side. I’m not going to provide how much of each ingredient because it really is all about personal taste and adding in more of the flavors you enjoy. So here it is:
- Quinoa cooked with vegetable broth
- Spinach (sauteed in a little olive oil and garlic)
- Avocado chopped
- Corn (I cut corn off a cob that I had roasted which gives an even better flavor)
- Roma tomatoes diced
- Green peppers diced
- Black olives diced
- Salt/pepper season to taste
- Optional: beans of choice
To dice the vegetables, I use a Vidalia Onion Chopper which you can buy on Amazon. It is a great kitchen tool that makes vegetable prep fast, and I love the smaller pieces so the flavors mix together better. Another quick tip – Costco sells quinoa, spinach, olive oil, garlic in the freezer section in a bag which takes 3 – 4 minutes to steam in the microwave. This makes this salad super quick and easy to prep. Let me know in the comments if you try it!
