Shrimp scampi over spaghetti squash Mushroom onion burgers with #airfryer brussels *see Greg's version with a fried egg on top* And some bedtime tea we are enjoying this week! Happy Saturday! I posted some keto updates in my Instagram highlights. But I'll share again in case it helps someone else... We are finding our longer term #keto rhythm with one splurge meal or treat a week & one meal with a smaller portion of a plant based starchy carb (like sweet potatoes). It's going well, and we feel like we are fat adaptive which is the long term goal of the #keto way of eating! I've said this before, but I'll share again. I was so skeptical that keto would work for us and be doable. But we have found it the easiest plan to adapt to, and we don't feel deprived. Does it take a couple weeks to feel this way? Yes! Does it take work? Yes, but ANY healthy lifestyle takes work! The idea that healthy living takes no intention is the same as thinking you can sit and do nothing and easily make money. Rewards in life take work! But they are so worth it! 👊 Xo, Liz 😘
I've been enjoying time in my kitchen as usual. And here is the proof.... @thewholecook mushroom steak bites + @paleorunningmomma bacon mashed cauliflower (Greg favorite) + #airfryerbroccoli Fish sticks (in air fryer) + #airfryer zucchini @thewholecook sausage cabbage skillet Collagen fat bombs (recipe adapted from @drjoshaxe but used the collagen I had on hand. Chia Pudding recipe adapted from @autumnelle_nutrition burger always with dill pickles, @primalkitchenfoods mayo/ketchup/mustard (they have seriously changed my life) + sauteed green beans in Primal Kitchen no soy teriyaki + @traderjoes cauliflower gnocchi Not pictured but just as yummy: cabbage/sausage soup - the reason I did the skillet is because I had leftovers I needed to use up from my soup ingredients chorizo scrambled eggs lunch salads (every week except two weeks since January) - I try to switch out veggies, toppings, protein and dressing each week to keep it interesting. This week's combo - mixed greens, red onion, bell peppers, zucchini, hard boiled egg, snacking seeds or nuts, banana peppers, dressing, baked chicken Update... We are still on keto. We are going to add in one carb splurge a week from my freezer/pantry because I have items I had stocked up on prior to starting keto and need to use them! This is THE longest we have followed a plan consistently and maintained progress AND still felt satisfied (not deprived). The food is delicious and we are still eating lots of whole, plant based foods! Win-win! I am still only on social media once a week (outside of some work social media), but would love to still connect. A little bit of what's been cooking in my kitchen during my social media break. ☑️ Tumeric riced cauliflower cooked in garlic ghee w/queso Buffalo burger ☑️ Bacon (turkey) w/ eggs cooked in garlic ghee topped with @gardenfreshgourmet artichoke salsa ☑️ Pork Carnita bowl with tumeric rice w/ all the toppings ➕ a side of keto friendly tortilla chips & siete queso ☑️ Chili lime wings (again) w/fresh cucumbers & @primalkitchenfoods ranch dressing Plus, I've done some more kitchen organization. Feeling like it's the most functional my kitchen has ever been. And I've been reminiscing about one of my first "healthy" cookbooks in the 90's. Fat free Cooking 😂 Look at me now. #keto So interesting how fat free was the thing and now we know it shouldn't be for our brain health. I was in my 20's during this time and definitely not my healthiest - because you can eat fat free and be eating a tone of sugar and nutrient poor foods! *That's a story for another post.* I'll still be off social media for a while but will try to pop on for some good eats! @marksdailyapple #keto Pork Carnitas paired with @sugarfreemom low carb tortillas. Plus, all the goodness on top - @sietefoods queso & taco sauce, sliced radishes, lettuce, red onions, avocado 🥑. Whoa! Flavor explosions! 💥 You can also just do a Carnita bowl or lettuce wrap but these tortillas are so good. Took me 20 minutes to make. Worth the extra time! Happy Hump Day! ❤️ Liz
